In Mexico, zucchini is a regular part of the diet and is a great source of vitamins and minerals. Our children love to eat "calabacitas a la Mexicana" (Mexican zucchini) which is served with chopped tomatoes and onion resulting in a dish that has the same colors as the Mexican flag. Zucchini can also be served scrambled in eggs or in a spicy sauce. Each month we purchase 140 kilos of zucchini for our home in order to feed our children a healthy vegetable and keep them well-nourished and feeling great.
